broiled salmon on a bed of sautéed spinach

Time: 5-10 minutes max
This is a great "go-to" dinner when you are short on time as it can be prepared in under ten minutes. Sprinkle salmon filet with sea salt and fresh ground pepper and drizzle with olive oil. Broil for 6-8 minutes - be careful not to overcook! Alternatively, you can prepare the fish the same way and grill it. In my estimation grilling adds more flavor but also takes more time. Chop stems from spinach bunch, wash and dry. Add olive oil to skillet and 2-3 cloves of minced garlic. When oil is searing hot add spinach. Remove from heat as soon as spinach is wilted - about 60-90 seconds. Serve with lemon wedge. This last part is key as I once learned that adding lemon to spinach helps facilitate your body's absorption of iron.
