We decided this weekend that we wanted some chicken perlo (aka chicken bog). We have a few different recipes for this meal; one is from Paula Dean (thanks Google), one is an adaptation of Paula Dean's recipe for the crock pot, and one is an adaptation of Paula Dean's recipe for two people that didn't have the time or the ingredients to cook it the way that Paula Dean would have cooked it.
Google also indicated that the name perlo is specific to South Carolina. The rest of the country calls it Chicken Pilau.
The quick and easy brand of perlo included the following ingredients:
-1.5 pieces of chicken (half a pack); this can be boneless or bone-in. The bone-in makes better broth, but pulling it off the bone and then shredding is more work.
-1 link of reduced fat turkey kielbasa. You can use regular kielbasa, or regular sausage for that matter.
-fresh onion or dried onion flakes
-1 crap-load of black pepper (you have to define crap-load for yourself)
-2 cups of rice
-1 egg
-salt
-red pepper
As evidenced by the use of a link of reduced fat turkey kielbasa, implementation of this recipe was partly based on a desire for chicken bog and partly based on a desire to clean out the freezer.
The steps for cooking were as follows:
-Boil chicken in 6 or 7 cups of water
-quarter the cylindrical portion of the kielbasa and cut it into relatively small disks, yielding little parts that look like trivial pursuit pie pieces
-if you use regular sausage, just mash the sausage until it looks like a million tiny crumbles
-saute sausage with diced onion for a few minutes (brown regular sausage)
-Remove cooked chicken from boiling water and add raw egg. Shortly after the egg, add the 2 cups of rice, salt, and pepper (red and black)
-Shred chicken
-Add chicken and sausage to boiling water and allow to boil for a few minutes
-turn down heat and allow concoction to stew for about an hour. I suggest stirring frequently and tasting often to determine whether the rice is cooked. You might have to add salt and pepper as you go.
This meal goes well with green beans and squash casserole.
