Fresh Peach Pie

Last weekend while in Hartsville, we went to Mcleod's Farm (in McBee, SC) and decided on buying lots of fresh vegetables along with some peaches. I am usually not a peach fan, but these peaches were amazing!! We found out that they sell Mcleod's peaches at Fresh Market so I actually had to go and get more because we ate most of them! When we bought them in Hartsville, Martin requested a peach pie, so I used Martin's mom's delicious pie recipe. It's a "no bake" pie so it's very refreshing on a hot, summer day and perfect for when peaches are in season. This recipe is great because it makes 2 pies... one for you and one for a gift if you don't eat them both. :)


Ingredients:


2 baked pie crusts (deep dish)

1 8 oz. cream cheese

1/2 cup sugar

2 cups fresh peaches (pealed and sliced) We used 3 cups this time.


Mix:


1 cup sugar

1 cup water

3 TBSP corn starch (I had to add a little more to thicken)

4 TBSP peach jello



Directions:

1. Mix cream cheese and 1/2 cup sugar and spread in bottom of 2 baked pie crusts. Top with fresh sliced peaches.


2. Mix 1 cup sugar, 1 cup water, 3 TBSP corn starch in boiler. Cook until thickened. This took about 20 minutes or so. Immediately add 4 TBSP peach jello. Cool about 10 minutes. Pour over fresh peaches. Place in refrigerator. Top with cool whip or serve with vanilla ice cream.
