Smores Cookies


S'mores Cookies
Here's another great recipe from Coconut & Lime food blog that I prepared. I made them so all of our pool workers would have something sweet to eat! The cookies taste great, but they also look kind of cool. Martin will tell you they are best right out of the oven and truly taste like a smores. Yum!

Ingredients:
1 cup flour
1 cup mini marshmallows
1/2 cup unslated butter at room temp.
1/3 cup graham crackers (about 2 crackers pulverized in the blender)
1/2 cup dark brown sugar
1/2 cup light brown sugar
1 egg at room temp.
1 1/2 tsp. vanilla
1/2 tsp. salt
1/2 tsp. baking powder
6 1/2 oz. semisweet chocolate chips.
2-3 graham crackers ( to put on top)

Directions:
Preheat oven to 350. The blog recommended cooking these on parchment paper or on a silipat. Combine flour, ground graham crackers, salt, and baking powder. In a large bowl, cream the butter and sugars until light and fluffy. Add egg and vanilla and combine. Gradually add the dry ingredients and mix until a thick dough forms. Fold in chocolate chips. Form cookies by dropping 1 teaspoon of douhg on the sheet 2 inches apart. Flatten slightly. Bake for 10 minutes then top each cookie with marshmallows and broken graham crackers. Press the graham crackers and marshmallows in so they don't fall off. Bake 2 more minutes before taking them out of the oven.
